Double Chocolate Cookies
2 sticks cold butter (cubed)
1 1/4 cup sugar
2 eggs
1/2 cup dark cocoa powder
2 1/4 cups all-purpose flour
1 tsp. baking powder
1/4 tsp. kosher salt
2 1/2 cups semi-sweet chocolate chips (or more if you like)
Beat cold butter and sugar for 2-3 minutes, until light and fluffy. Add eggs one at a time, scraping the bowl as needed. Add cocoa powder and beat until incorporated. In a separate bowl, mix flour, baking powder, and salt. Slowly add the flour mixture to the chocolate mixture, adding a little at a time. Fold in chocolate chips.
Place the dough on a floured surface and knead by hand for about 30 seconds, or just until you know all the ingredients are well incorporated. Using a large ice cream scoop, make about 12 balls and place a few inches apart on a baking sheet. Flatten the cookies slightly with your hand. Bake for 12-16 minutes (I took mine out a little early and that turned out really well).
Let cool for 5 minutes and then transfer to a cooling rack.
